If anyone has good venison jerky recipes, please post 'em. I'm itching to make a bunch in the smoker, and would like to try something. Thx in advance.

3 cups amber ale, 2 cups soy sauce, 1/2 cup Worcestershire sauce, 2 TBSP cracked pepper corn. mix all, add venison 2lbs. cover put in frig overnight, 6 hrs min. drain pat dry sprinkle with ground black pepper to taste. dry in oven 4 hrs at 200 deg. or use dehydrator. You can add onion and garlic powder if you like. Maybe even try fresh or dried ginger. This is my nephews recipe. Not that it matters but, he uses Wis. white tail.

Sounds good. I like that there's no salt added in addition to the soy. I often get salty batches. This might solve that. Thx!

I keep mine simple. Kosher salt, coarse fresh cracked black pepper and some brown sugar. Let it sit at room temp several hours or overnight and put in smoker or dehydrator.

I've tried it a hundred different ways, but this is the best I've found.

Put all your meat in a bowl. Sprinkle the ingredients on top and mix the meat several times in the bowl so it works in. Key is room temp for 12 or so hours.

I use the Backwoods jerky product from Bass Pro - hickory flavor and just put in the dehydrator. delicious.
