I am going to guess that this guy has zero clue how to cook meat. It sounds like he cooked moose back strap to tire consistency.

One stud moose but have to agree he definitely doesn't know how to cook it

From the people I've met in the PNW, I would not be surprised if that were the case.  The concept of medium rare was completely lost on them..

I literally just had dinner with 2 folks from the PNW. Very nice steakhouse... medium well....
